Since this week we have the honour to be mentioned in the book “Bier & Spijs” by Fiona de Lange and Jo Vaessen. Alongisde Jo’s dishes Fiona paired, without consent of the brewers, all types of beers among which are Elixir, Broeders and Dark Roast.
Jo, owner of restaurant Dwars in Amsterdam, known for his food pairings with beer, has put down 70 dishes and Fiona, beer sommelier and beer lover for over 20 years, opened a row of bottles to see what suited the dish best. Both were convinced the book only needed to have Dutch beers included as the dutch market offers the whole scala of flavors.
